The sweet potato pancake makes for a sweet yet healthy breakfast or snack.
Ingredients
- Sweet potato
- Sweet potato or tapioca flour
- Egg
- Salt
- Monkfruit sugar/honey or any other natural sugars
- Vanilla extract
- Cinnamon powder
- Butter
- Olive oil
Instructions
- Peel and cut sweet potato into thin slices.
- Steam the potato slices until softened.
- To start creating the dough, mash the sweet potato and let it cool.
- Add flour, with the amount of flour equal to amount of sweet potato.
- Add 1-2 eggs, and mix.
- Add salt, cinnamon powder, vanilla extract, and honey, and mix. This creates the sweet potato dough.
- Heat pan & add oil & butter.
- Scoop the sweet potato dough (about a spoonful) and fry it. Be sure to flatten it while frying.
- Fry both sides until brownish.
- If you want to make it a little crispier, oven bake it for about 5 minutes at 400 F.
