Sweet Potato Pancake (Paleo-friendly)

The sweet potato pancake makes for a sweet yet healthy breakfast or snack.

Ingredients

  • Sweet potato
  • Sweet potato or tapioca flour
  • Egg
  • Salt
  • Monkfruit sugar/honey or any other natural sugars
  • Vanilla extract
  • Cinnamon powder
  • Butter
  • Olive oil

Instructions

  1. Peel and cut sweet potato into thin slices.
  2. Steam the potato slices until softened.
  3. To start creating the dough, mash the sweet potato and let it cool.
  4. Add flour, with the amount of flour equal to amount of sweet potato.
  5. Add 1-2 eggs, and mix.
  6. Add salt, cinnamon powder, vanilla extract, and honey, and mix. This creates the sweet potato dough.
  7. Heat pan & add oil & butter.
  8. Scoop the sweet potato dough (about a spoonful) and fry it. Be sure to flatten it while frying.
  9. Fry both sides until brownish.
  10. If you want to make it a little crispier, oven bake it for about 5 minutes at 400 F.
