Korean Japchae Noodles (Paleo-influenced)

The Japchae noodles is a Korean food that can be served cold or hot. In our recipe, we use Grass or Sweet Potato noodles in replacement of noodles that contain wheat and therefore grain.

Why can grain be harmful?

For 1, grains contain lectins, which can be harmful. For 2, it is worth noting that grains have never been a big part of the diets of our ancestors.

Why can lectins be harmful?

For 1, lectins can bind to nutrients and prevents your body absorbing these nutrients. For 2, lectins can bind to the digestive tract & cells in general, thereby disrupting digestion and absorption of important nutrients. For example, a type of lectins contained in undercooked kidney beans can cause red blood cells to clump together. For 3, it is speculated that certain plants contain lectins to defend themselves from plant eaters. These are plants that do not require consumption by animals to spread their seeds.

Don’t they have some benefits?

Maybe, to be honest. At the end of the day, I just want to bring awareness. I ask you to please consider these points and keep your diet balanced.

Ingredients

  • Dried sweet potato noodles — Boil and soften and drain with cold water & add 1-2 tsp of sesame oil.
  • Meat — any type works. Cut into thin slices.
  • Shiitake mushrooms — Cut into small pieces.
  • Eggs — Beaten & add salt & fry separately. Cut into long thin pieces.
  • Carrots — Chopped thin & long pieces.
  • Onion — Chopped.
  • Garlic — Chopped into pieces.
  • Spinach
  • Monkfruit sugar/honey
  • Green onion
  • Cilantro — optional.
  • Sesame seeds — roast at low heat for a few minutes.
  • Sesame oil
  • Olive/avocado oil
  • Soy sauce
  • Salt
  • Rice wine
  • Pepper
  • Sweet potato or tapioca starch (1 tsp)

Instructions

Make sure all ingredients are prepared as instructed.

Instructions to make noodles

  1. Boil and soften the dried sweet potato noodles.
  2. Once boiled, drain with cold water.
  3. Add 1-2 tsp of sesame oil and mix.

Instructions to cook meat

  1. Marinate the meat and shiitake mushrooms with soy sauce, pepper, rice wine, salt, tapioca starch, honey.
  2. Heat the pan and add some oil & chopped garlic. Add & fry the marinated meat & fry until cooked. You may nee to cover the pan lid to ensure the entire meat is adequately cooked, especially for chicken or pork meats.
  3. Add some chopped green onions to the marinated meat when done.

Instructions to cook everything

  1. Heat pan and add oil and chopped onions and chopped carrots. Fry until there is aroma.
  2. Add garlic, spinach, and noodles after there is aroma.
  3. Add soy sauce, salt, sugar, and fry until hot.
  4. Add cooked meat, cooked egg, and green onions.
  5. Mix all thoroughly and sprinkle the sesame seeds.
